Firmly hold the oyster in one hand and the knife in the other

Carefully insert the blade between the shells on the side of the oyster in a small rational movements, taking care to hold the knife as close to the tip of the blade to avoid injury.

Slightly lift the upper shell without separating the hinge before removing the top shell, mark 2/3 of the hinge

at the location of the thumb.

Insert here the knife blade to sever the muscle closest to the upper shell : it avoids to cut off part of the oyster with the lid and thus damage the oyster.

Once the muscle cut you can completely detach the shell.

Opened like this, the oyster is quite presentable.
